SPICE ROOM was born in 2017 when Kal Pant opened the doors of a small, warmly lit dining room in Denver's West Highlands neighborhood. The vision was simple and deeply personal: share the food he grew up with — the curries, biryanis, and slow-cooked dishes that carry the memory of home.

What set the kitchen apart from the start was the commitment to grinding spices in-house — no shortcuts, no pre-blended powder. Every dish begins with whole spices, toasted and ground the day they're used. It's the kind of detail most diners never see, but always taste.

Word spread. The Highlands location quickly earned a loyal following, and the family grew the restaurant into new communities — Arvada and Denver's Bluebird District — without ever changing the thing that mattered most: the food, and the feeling of being welcomed. Today, SPICE ROOM is recognized as the best restaurant in Denver by thousands of loyal guests.
