What is Tikka Masala? The History Behind Denver's Favorite Dish
Discover the origins, flavors, and techniques behind tikka masala — one of the most ordered dishes at Spice Room Denver.
What is Tikka Masala?
Tikka masala is one of the most beloved dishes in the world — and Denver's favorite Indian entrée. But where did it come from, and what makes it so irresistible?
The Origins
The exact origin of tikka masala is debated. Some food historians trace it to the Punjab region of India, while others credit British-Indian chefs in Glasgow during the 1970s. Regardless of its birthplace, tikka masala has become a global icon of Indian cuisine.
The name breaks down simply: tikka refers to marinated, grilled pieces of meat (usually chicken), and masala means a blend of spices. Together, they create a dish of smoky, tender protein swimming in a rich, creamy, spiced tomato sauce.
What Makes Great Tikka Masala?
At Spice Room, our tikka masala starts with chicken marinated overnight in yogurt and a proprietary blend of over 12 spices, then charred in our tandoor oven. The sauce is built from scratch using vine-ripened tomatoes, cream, and freshly ground spices — never from a jar.
Key elements that define an excellent tikka masala:
- Smoky char from tandoor-grilled chicken
- Balanced heat — warm but not overwhelming
- Creamy texture without being heavy
- Fresh-ground spices including garam masala, cumin, coriander, and fenugreek
Tikka Masala vs. Butter Chicken
Many diners confuse tikka masala with butter chicken. While both feature tomato-cream sauces, butter chicken (murgh makhani) is typically milder and sweeter, with a generous amount of butter. Tikka masala has a bolder spice profile and a slightly tangy finish.
How to Enjoy It
Tikka masala pairs beautifully with garlic naan or steamed basmati rice. At Spice Room, we recommend adding a side of dal makhani for a complete meal.
