
Crispy Vegetable Samosas

Ingredients
- 2 cups all-purpose flour
- 1/4 cup ghee or oil
- 1/2 tsp ajwain seeds
- 3 large potatoes, boiled and mashed
- 1/2 cup green peas
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 2 green chilies, minced
- 2 tbsp fresh cilantro
- oil for deep frying
Instructions

Make dough: Mix flour, ghee, ajwain, and salt. Add water gradually to form stiff dough. Rest 30 minutes.

Heat oil, add cumin seeds. Add potatoes, peas, and all spices. Cook for 5 minutes. Cool.

Divide dough into 6 balls. Roll each into oval, cut in half.

Form each half into a cone, seal edge with water. Fill with potato mixture.

Seal the top edge, pressing firmly.

Heat oil to 325°F. Fry samosas on medium-low heat until golden, about 8-10 minutes.

Drain and serve hot with tamarind and mint chutney.
